Avocado Grilled Chicken Burgers

Ingredients

4 Boneless chicken fillets

Broightergold garlic & rosemary rapeseed oil

for the seasoning

1/2 tbsp Sea salt
1/2 tsp Paprika
1/2 tsp Turmeric
1/3 tsp Cayenne pepper
1/2 tbsp onion granules
1/2 tbsp garlic granules
1/2 tsp dried rosemary
1 tsp dried parsley
1 tsp dried oregano
1/2 tbsp ground black pepper

For the sauce

1/2 cup mayo
1 tbsp chopped parsley
1/2 tsp garlic granules
salt & pepper to season

To serve

Smashed Avocado
- one whole avocado mashed with the juice of half a lemon and seasoned with salt & pepper
Cheese
Sliced red onion
white burger buns

 

Method

  1. Prepare the Chicken

    Place each boneless chicken breast into a ziplock bag with a little oil and pound them out with a rolling pin so they are flat. Drizzle them with some of the Broightergold garlic & rosemary oil. Add all the ingredients for the seasoning to a small bowl and mix together. Season the chicken on all sides and it is ready for the BBQ

  2. Make the Garlic Mayo

    Add the mayo to a small bowl and add the chopped parsley, garlic and a pinch of salt and pepper. Mix together and leave to the side, ready to spread on the buns before serving.

  3. Fire up the BBQ

    Light the charcoal in your BBQ and set it up for direct cooking. On the Kamado Joe I set the cooking grates on the highest level to avoid flare ups blackening the chicken. Place the chicken breast over the coals to cook. Sear it on both sides for 2-3 minutes to start building colour then keep flipping it every couple of minutes. Just before you get to your final target temperature of 72c, place a slice of cheese on top of each chicken breast to melt.

  4. Toast the buns and make the smashed avocado

    Lightly brush your burger buns with mayo and place them over the coals to toast. Remove the flesh from the avocado and mash it in a bowl. Squeeze in the juice of half a lemon and season with some salt and pepper.

  5. Time to build the burgers

    Smother the bottom toasted bun with the smashed avocado then place the chicken breast on top of it. Add a few slices of red onion on top of the burger. Finally, layer the top toasted bun with the garlic mayo and place it on top to finish the burger off.
